This coffee comes from small holders in the Chiapas region of Mexico. Chiapas is the largest coffee producing state, it's known for it's high quality and complex beans. Bourbon and Marsellesa varietals are grown in the high mountainous region close to the border of Guatemala. The coffee trees here benefit from rich volcanic soil and heavy rainfall. The result is a coffee that is smooth and balanced. Subtle notes of cinnamon and cacao start your sip and it finishes with a lime sweetness.
